I love Crossfit Bishop. I am the kind of girl that isn't content with 30 minutes of "cardio" on a bike, or a step aerobics class. I like the full body burn, the opportunity to compete, and most of all the surprise that comes with doing something you didn't think you could do. Crossfit is the master at all of this. Crossfit breaks your body down so it can build back up into a better stronger one. It challenges your mind when you do three more reps than you thought possible. And it teaches your heart all you are capable of. Colin is a great instructor. I’ve never had a personal trainer but it is awesome having someone watching your form so closely, it makes you feel safe knowing that someone is looking out for you during challenging exercises so that you can push yourself a little further. Crossfit Bishop has got Colins intensity and attention to detail, Mollys inspiring fitness and kind spirit, a group of incredibly fun and fit people who are as psyched as you and an adorable baby too. Its certainly one of my favorite places to be in Bishop!!

Crossfit Works!  As a young buck, flush with time to get out in the mountains, I felt strongly that the best training for climbing and backcountry skiing was... climbing and backcountry skiing.  Now I'm by no means the busiest guy, nor do I have the most sedentary job, but I've felt the pinch of time in recent months.  I've spent many days over these busy months with Colin at Crossfit Bishop.   Colin energizes the classes, exudes knowledge and confidence, and successfully walks the fine line between motivation and all out pushing.  I just had my first opportunity in months to test my new Crossfitted bod'.  I can say that the total body training and the fresh, varied workouts make a huge difference!  The strength and endurance gains from Crossfit really shined on a recent one-day, monstrous exploratory ski tour in the High Sierra. I look forward to continuing to train and continuing to express strength gains.

Paleo Pizza

Hey All You Funky Nutritionally Challenged!!!

I just made this yummy Paleo Pizza for the family tonight and, although the kids didn't touch it, Meghan and I loved it. I have tried a number of Paleo crust recipes, and this one gets some big stars:

Cauli-Crust

Crust:

1 head of cauliflower, steamed and crushed into cauliflower “rice” (approx. 3 cups). (I actually don't steam it to make the "rice". Just grate in a Cuisinart)

3 eggs

3/4 cup almond meal

1 tbsp. oregano

1/2 tbsp. garlic powder

1/2 tbsp. crushed red pepper flakes

1 tsp. salt

2 tbsp. olive oil

Toppings:

1-2 cups pizza or marinara sauce

1 cup diced pineapple

1/2 diced orange, red, and green bell pepper

1/2 diced onion

8 ounces of sliced ham, diced

Notes:

Experiment with any and all toppings!

Directions:

1. Preheat oven to 450 F.

2. In a large bowl, mix together cauliflower rice, eggs, almond

meal and spices.

3. Grease a large cookie sheet. Place cauliflower mixture on the sheet and shape into a large, thin circle a half-inch thick. Use the back of big spoon, starting at the center, and message it out evenly in a circular pattern.

4. Brush the top with olive oil.

5. Bake in the oven for 20 to 25 minutes until the top is brown and crisp.

6. Remove from oven and immediately spread tomato sauce on the crust.

7. Cover the cauli-crust with the toppings and place under a broiler for 3 minutes to heat the toppings.

8. Serve and enjoy!

Here we go.....

Day One!  Oh my!  Starting the challenge on vacation has got to be a bad part on my planning... but it is totally do-able!  We went to the store this morning / well it was afternoon by the time we got up. ( Five meals will be our challenge for  today.)  We bought turkey meat, grapes, apples,  avacado and mineral water.  This covered us for one meal and a snack.

Use this blog to ask coach Pablo questions, post your triumps throughout the day, as well as your struggles. 

Oh, and we finished that beer last night, so negative points today ! I know you were worried.

Today

We will eventually come to understand life (hopefully before it’s too late), it will never be perfect. It will never be easy. There will always be obstacles, annoyances, and limitations to contend with on the path to health and well-being. Regardless of what our lives look like next to someone else’s, ours is still the one we go home with at the end of the day. Ours is the one we get to live – for all its possibility as well as challenge. What will you make of it today?
